Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.

Combine the first nine ingredients in a bowl. Place the butter and brown sugar in a second bowl and beat until well combined. Beat in the eggs and vanilla. Add the oat mixture to the wet ingredients and mix until well combined. Roll the dough into 2" round balls and place on the baking sheets, spacing them about 3-inches apart. Press the balls into thick discs.

Bake the cookies, one tray at a time, for 15 minutes.

Recipe Options: To make the cookies entirely with oats, replace the 1/2 cup of bran with another 1/2 cup of quick cooking oatmeal. And, if you like nuts in your cookies, replace 1/2 cup of the dried fruit with 1/2 cup of walnut or pecan pieces.
