Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment. Beat the butter and brown sugar in a bowl until well combined and light. Beat in the eggs and vanilla. Combine the remaining ingredients in another bowl; mix into the wet ingredients until well combined. Roll the dough into 2-inch round balls and place on the baking sheets, spacing them about 3-inches apart. Press the balls into thick discs. Bake for 15 minutes, one tray at a time.
