Preheat oven to 350 degrees F. Beat butter and brown sugar until light. Beat in eggs and vanilla. Add remaining ingredients and mix until just combined. Roll dough into 2 inch round balls and set on a non-stick or parchment paper-lined cooked cookie sheet, leaving a 2-3 inch space between each cookie. Slightly flatten cookies out and bake 12-15 minutes.
Note: Oats are a good source of vitamin B-1 and contain a good amount of vitamins B-2 and E.
