Place the strawberries, liqueur and icing sugar in a bowl and toss to combine. Cover and marinate the strawberries at room temperature 30 minutes. Use a vegetable peeler to shave the chocolate into small curls. To serve, spoon the strawberries into 8 decorative glasses. Top each serving with the whipped cream, chocolate and mint sprigs, and then serve.
