Divide and fan pear slices on one side of 4 salad plates. Combine dressing in a bowl. Add Arugula, gently toss, and then mound on the other side of the salad plates. Arrange remaining ingredients on top and serve.
Note: To toast walnuts, place in a single layer on baking sheet and bake in a 300 degree F oven 10-15 minutes, or until lightly toasted. Arugula is rich in iron and a good source of vitamin A and C.
