Preheat the oven to 200 degrees F. Drain the tofu well and cut into 8 slices. Carefully pat the slices dry with paper towel. Heat the oil in a large non-stick skillet set over medium-high. Add the tofu and sear for 1 minute on each side. Transfer to a large platter and place in the oven. Drain the excess oil from the skillet and add 1/4 cup of water. Add the bok choy to the skillet. Cover and steam for one minute. Arrange the bok choy on the platter with the tofu. Add the remaining ingredients to the skillet and whisk to combine. Bring to a boil; boil for 2 minutes. Pour the curry sauce over the tofu and bok choy and serve.
