Method

Preheat oven 325 degrees F. Season the pork with salt and pepper. Heat oil in a skillet set over medium-high heat. Add pork, brown on all sides, and then place in a casserole. Combine remaining ingredients in a bowl, and then pour over the pork. Cover and bake 1 1/2 to 2 hours, or until very tender. Remove the pork from the pan and let rest 10 minutes before slicing. Skim any excess fat from top of sauce before spooning over pork. Pork makes a nice Sunday supper when served with pasta and a mix of fresh, cooked green vegetables.
