Preheat the oven to 325 degrees F. Heat the oil in a large skillet set over medium-high. Season the chops with salt and pepper; coat in the flour, shaking off excess. Brown the chops and then place in a 9" by 13" baking dish. Top and surround with artichokes, oranges pieces, olives and onion. Combine the remaining ingredients in a bowl, and then pour over the pork.
Cover and bake for 90 minutes, or until the pork is very tender.
