Method

Bring a large pot of water to a boil to cook the noodles.
Make sauce mixture by combining the first 7 ingredients in a bowl. Heat the oil in a wok or very large skillet set over medium-high. When hot, add the ginger, garlic and bell pepper and stir-fry 30 seconds. Add the bok choy and prawns and stir-fry 1 to 2 minutes more. Make a well in the centre of the pan and pour in the sauce mixture. When it comes to a simmer, stir and coat the other ingredients with the sauce. Reserve stir-fry on low heat.
Add noodles to the boiling water and cook until just tender, about 1 minute. Drain noodles well and divide among 4 bowls. Top noodles with prawn mixture, sprinkle with green onions and serve.
