Quarter the avocado lengthwise, pull it apart and discard the pit. Remove and discard the peel from the avocado. Place the quartered avocado in a food processor or in the cup that came with you immersion (hand) blender. Add the remaining ingredients and pulse the mixture until smooth and pudding like. Divide the mixture between two serving dishes or glasses. Cover and refrigerate until ready to serve. Pudding can be made a few hours before serving.
Recipe Options: For added flavour and texture, sprinkle and garnish each pudding with some coconut flakes or toasted, sliced almonds.
