Preheat the oven to 350 degrees F. Place the pork in a roasting pan; season with salt and pepper. Roast 90 minutes, or until the pork reaches an internal temperature of 160 degrees F on a meat thermometer. Set the pork on a plate, tent with foil and rest 10 to 15 minutes.
While the pork rests, combine the lemon juice, apples, spices and sage in a bowl. Melt the butter in a large skillet set over medium to medium-high heat.
Add the apple mixture, honey and apple juice, and cook, stirring occasionally, for 5 minutes, or until the apples start to soften. Slice the pork and serve the apples alongside.
