Method

Preheat the oven to 425 degrees F. Trim excess fat from lamb and place, bone-side down in a small roasting pan. Combine remaining ingredients in bowl. Divide and pack mixture on top of the meaty portion of the lamb. Roast the lamb 22-35 minutes for rare, 25-28 for medium rare, and 30 minutes for medium. Rest the lamb 5 minutes to allow juices to set before serving.
