Place the zucchini, salt, pepper and 1 Tbsp. of the oil in a bowl and toss to combine.
Grill the zucchini over medium-high heat 1 minute per side; cool to room temperature. Slice the zucchini into strips. Combine the remaining oil, lemon juice and garlic in a salad bowl; season with salt and pepper. Add the zucchini and remaining ingredients and toss to combine. Cover and refrigerate until ready to serve.
