Combine the first 7 ingredients in a small bowl. Store in the fridge until needed. In a small skillet set over medium-high heat, fry the pancetta until crispy; drain away excess fat and dry on paper towels. Divide the lettuce among plates. Drizzle with the dressing, top with the pancetta and Parmesan and serve.
Note: Pancetta, a rolled, Italian-style bacon, is available in the deli. A vegetable peeler can be used to shave Parmesan cheese into thin slices.
