Method

Place the oil, vinegar, mustard, salt and pepper in a bowl and whisk well to combine. Add the remaining ingredients, except cheese, and toss to coat with the dressing. Divide among 4 plates, ensuring that some of the shrimp and tomatoes decorate the top. Disperse cheese over top and serve.

Serving Suggestions
