  1. Combine brown sugar, spices and salt in a medium bowl and set aside.
  2. Peel, core and halve the apples. In a food processor fitted with coarse shredding attachment, shred apples, in batches. (If you don’t have food processor, you could shred the apples with a box grater.) Place the shredded apples in a slow cooker with a five litre or more capacity. 
  3. Mix the brown sugar mixture and vanilla into the apples. Cover and cook apples on high for 4 hours.
  4. In a food processor, or in the slow cooker with an immersion (hand) blender, puree apple mixture until smooth. Return the pureed apple mixture to the slow cooker, leave uncovered and cook on high for two to three more hours.  Stir occasionally until thickened.  
  5. Transfer the butter to jars and cool to room temperature. Tightly seal and store in the refrigerator for up to two weeks. Apple butter could also be frozen for up to three months. The apple butter could also be canned.
