Place the first 7 ingredients into your slow cooker. Place the stock, flour and tomato paste into a bowl and whisk to combine. Mix into the ingredients in the slow cooker. Cover and cook on low for 8 hours. Season with salt and pepper; sprinkle servings of the stew with chopped fresh parsley, if desired.
Note: This recipe is designed for an oval-shaped slow cooker with a 5 litre or more capacity.
