Combine the first 10 ingredients in your slow cooker. Cover and cook on the low setting for 8 hours. Season with salt and pepper. Sprinkle servings of the stew with chopped green onions and serve.

Note: This recipe is designed for an oval-shaped slow cooker with a 5 litre or more capacity. Thrifty chorizo sausages are available in the meat department. To roast, place in a non-stick or parchment paper lined baking dish. Roast at 375 degrees F for 20 minutes, turning once, or until cooked through.

Serving Suggestions

Dress up this complete meal by serving it with grated Monterey Jack cheese for sprinkling on top of the stew, and warm corn tortillas to dunk into it.
