Combine the first eight ingredients in a medium bowl. Add the chicken and turn to coat. Cover and marinate in the fridge for 2 to 4 hours. Preheat the oven to 375 degrees F. Place the chicken in a single layer in a parchment paper-lined baking dish. Drizzle any remaining marinade over the chicken. Bake for 25 minutes, or until cooked through. Divide among plates, spoon the pan juices over top, sprinkle with the parsley and serve. If desired, serve the chicken with an assortment of olives.
