Method

Combine salad dressing ingredients in a small bowl and then set aside.

Divide and mound spinach among 4 plates. Fan apple slices over top. Divide and place the cubes of cheddar in the centre of the salad. Drizzle with dressing and serve.

Serving Suggestions

Make a light meal of the salad by accompanying it with slices of rye or sour dough bread, and, if desired, a few slices of smoked ham or turkey.
