Method

Fry the bacon over medium to medium-high heat until crispy. Drain on paper towel and reserve. Place the lemon juice, mustard, garlic, sugar and oregano in a salad bowl and whisk to combine. Slowly whisk in the oil. Add the spinach and toss to coat. Divide the spinach among 4 plates. Decorate the salad with the bacon, egg and onion.
