Method

Place the vinegar, oil, mustard and honey in a salad bowl and whisk to combine. Season the dressing with salt and pepper. Add the spinach to the bowl and toss to coat. Divide and mound the spinach on 4 plates, artfully top with the cheese, apples and nuts, and serve.
