Method

Brush chicken breast with oil and season with salt and pepper. Grill over medium-high heat for 3-4 minutes per side, or until cooked through. Cool, and then slice at an angle. Spread mayonnaise on bread slices. Top four slices with lettuce leaves. Top with chicken, divide and arrange remaining ingredients on top, and set on remaining bread slices. Slice each sandwich into halves or quarters and serve.
