Place all the ingredients, except garnish, in a food processor. Pulse until smooth. Thin with a bit more oil or water if you find it too thick. Spoon into a decorative bowl, cover and keep refrigerated until ready to serve. When ready to serve, uncover and drizzle the top of the hummus with 1 tsp. or so of olive oil. Decorate hummus with a mint sprig and some slices of sun-dried tomato and serve.
