Method

Preheat the oven to 375 degrees F. Place bread cubes on a non-stick baking sheet. Add the oil and cheese and toss to combine. Bake 10 minutes, or until lightly toasted. Place the yogurt, lemon juice, honey, mustard, Tabasco, salt and pepper in a salad bowl and whisk to combine. Add the spinach and toss to coat. Divide the salad among four shallow bowls or plates. Divide and top with croutons and salmon and serve.

Serving Suggestions

Make a fine, light lunch or dinner by serving the salad with slices of baguette and a glass of BC sparkling wine, or Riesling wine.
