Alternate tomato and bocconcini slices on a platter. In a small bowl, whisk together the oil, vinegar, chopped basil, sugar, salt and pepper. Drizzle on the salad and garnish with fresh basil leaves. Serve immediately.

Recipe Options: For a more vibrant-looking salad use a mix of coloured tomatoes - yellow, orange and red – instead of just red. For a more complex taste, use a mix of fresh herbs in the vinaigrette, such as basil, oregano and parsley, instead of just basil.
