Place all the ingredients, except the oil and marinara sauce, in a bowl and mix until just combined. With cold-water-moistened hands, divide the mixture into 4 balls. Shape each ball into a 3/4" thick patty.
Heat the oil in a large skillet over medium heat. Add the patties and cook for 4 to 5 minutes per side, or until entirely cooked through and internal temperature reaches 170 degrees F. Serve the patties on a pool of the marinara sauce.
Note: Dried sage leaves are available in the bottled herb and spice aisle. It's made from crumbled sage leaves; don't mistake it for finely ground sage. Marinara sauce is sold in our canned tomato product aisle. Before chopping the kale, remove the leafy part from the tough, rib-like centre.
