Preheat oven to 350 degrees F. Place all meatloaf ingredients in a bowl and gently mix to combine. Pat meat mixture firmly into a non-stick, or lightly oiled, 9 by 5 inch loaf pan. Or, shape into a free-form loaf of similar size on a baking sheet. Bake 1 hour, or until a meat thermometer inserted in centre of meatloaf reads 170 degrees F. Rest meat loaf 10 minutes before slicing.
To make apple sauce, place all ingredients in a pot and gently simmer until apples are very tender. Mash with a potato masher or pulse in a food processor to a sauce-like consistency. Serve sauce, warm or cold, alongside the meatloaf.
Any unused sauce can be stored in a tightly-sealing jar in the fridge for several days.
