Combine the first 7 ingredients in a medium bowl. Add the turkey and turn to coat. Cover, refrigerate and marinate the turkey, turning occasionally, for 4 hours, or overnight. Preheat your grill to medium-high. Divide and thread the turkey on 4 skewers. Season the souvlaki with salt. Grill for 6 to 8 minutes, turning occasionally, until cooked through. Serve the souvlaki, pulled off the skewers, on pita bread with such things as tzatziki sauce, tomatoes, cucumber and pitted olives.
