Mix all burger ingredients together in a bowl until just combined. Form the mixture into 4, 3/4-inch thick patties. Grill, lightly oiling surface if not non-stick, over medium-high heat 4-5 minutes per side, or until cooked well done. Overlap the cheese slices on the burger so two points hang down like a vampire’s fangs. Continue cooking just until the cheese begins to melt. Top the bottom of the buns with lettuce. Place a tomato slice in the centre of each leaf, slightly hanging it over the edge of the bun. Set on the burger as shown in the photograph. Overlap the red onion slices on cheese; set pickles on onions. Set on top burger buns and serve.
