Method

Heat the oil in a wok or large skillet set over medium-high. Add the onion, bell pepper, carrot and mushrooms and stir-fry 3 minutes. Add the curry powder, water chestnuts and bok choy and stir-fry 1 minute more. Mix in the rice, stock and green onions and cook 3 minutes more, or until the rice is hot.
