Brandy Soaked Chocolate Dipped Cherries

This adult treat sees sweet, plump cherries infused with brandy, before being divinely coated in rich chocolate.

Step 1

Fill a tall, narrow jar with 24 to 30 stem-on cherries and add 1 cup brandy or cherry brandy. Gently push down on cherries to submerge. Seal jar and let stand at room temperature for 24 hours.

Step 2

Chop 225g Callebaut dark or milk chocolate. Place all but 1/4 cup in a heatproof bowl set over barely simmering water. Heat, stirring occasionally, until melted. Remove from heat, and stir in remaining chocolate until melted (the second addition of chocolate will temper and make it look shiny once set). Remove cherries from brandy and set on paper towel. Hold the stem and dip to coat the cherry in chocolate.

Step 3

Let the excess chocolate drip off and set cherry on a parchment paper-lined tray. Repeat with the remaining cherries. Refrigerate the cherries to set the chocolate, and then enjoy.
