Cheese Appetizers

Here are three simple, but divine ways to use cheese in a bite-sized appetizer.

Mini Brie and Berry Skewers

To make each skewer, top a cube of Brie with a fresh berry, such as blueberry, raspberry or blackberry. Insert a toothpick into the berry and through the cheese. Set on a serving plate, drizzle with a little balsamic crema (also called balsamic reduction), and enjoy.

Crackers with Proscuitto, Preserves and Gorgonzola

To make each bite, spread a sturdy cracker with a preserve, such as red currant jelly or fig spread. Top preserve with a twirled piece of prosciutto and some crumbled Gorgonzola cheese. Garnish with a leaf of fresh oregano or baby arugula.

Smoked Salmon, Cucumber and Whipped Goat Cheese Bites

To make 16 bites, slice 16, 1/4” to 1/2” thick rounds of English cucumber and set on a serving plate. In a bowl, whip 113g of goat cheese with 2 Tbsp. whipping cream, until light and smooth. Pipe or spread on the cucumber rounds. Top with a twirled piece of smoked salmon, garnish with dill sprigs, and enjoy.
