How to Brine Turkey

Use these 3 steps to help guide you when preparing our Citrus and Herb Brined Roast Turkey recipe.

Step 1

Prepare brining ingredients and set in a large, stainless steel (non-reactive; not aluminum) pot with your water. Bring to a boil over medium-high heat to dissolve salt. Remove pot from heat and cool brine to room temperature.

Step 2

Pat turkey dry, and then lower and completely submerge in the brine in the pot. Or place turkey in a food-safe bucket and pour brine over it. Cover, refrigerate and brine turkey 18 hours.

Step 3

When ready to cook, lift turkey out of brine and drain well. Discard brine. Pat turkey dry inside and out; set in a roasting pan. Tie legs together; fold and tuck wings under the body. Roast as described in the recipe.
