Use the photos and steps to guide you when making our Grilled Margherita Pita Pizza recipe.

Step 1
Slice heirloom tomatoes into 1/4” to 1/2” slices. You’ll need 5 to 6 slices for each pita pizza you want to make.

Step 2
Cut a 125g ball of mozzarella di bufala in half. Now cut each half piece of cheese into 6 slices. You’ll need a half piece for each pita pizza you want to make.

Step 3
Brush each side of the pita with 1 tsp. olive oil.

Step 4
Grill the pita until nicely coloured on one side, about 1 minute, remove from the heat and set on work surface.

Step 5
Remove pita from the heat and set on a work surface, grilled side up. Spread top of pita with 2 Tbsp. strained tomatoes.

Step 6
Top pita with 5 or 6 slices of tomato.

Step 7
Now top pita with 6 pieces of the mozzarella di bufala.

Step 8
Carefully set pita back on the grill, cheese side up. Season with salt and pepper. Close the lid on the barbecue, or cover your indoor grill with a lid or foil. Cook pizza 2 to 3 minutes, or until lightly charred on the bottom and the cheese has just begun to melt.

Step 9
Remove pita from the grill and set on a plate or board. Divide and top with the fresh basil leaves, drizzle with a little balsamic crema and serve.
