How To Make Blender Hollandaise Sauce

Here’s a quick way to make hollandaise for eggs benedict, fish and vegetables, such as asparagus.

Step 1

Melt 3/4 cup of butter until bubbly, and then keep warm. Warm the bowl of your blender with hot water for 1 minute then drain well. Put 3 large egg yolks, 2 Tbsp. lemon juice, 1/2 tsp. Dijon mustard and 1/4 tsp. Tabasco in blender. Blend to combine. Now blend in 1 Tbsp. boiling water.

Step 2

Partially remove insert from blender lid. With blender running, very slowly pour hot butter in a thin stream into egg yolk mixture, mixing until a sauce forms.

Step 3

Taste the hollandaise and season with salt, if needed. Makes about 1 1/2 cups.
