How to Make Caramelized Onions with Bacon

Sticky, sweet slowed cooked onions flavoured with smoky bacon and tangy balsamic vinegar.

Step 1:

Peel, half and thinly slice a large red onion (about 450g). Cut three strips of peppered or regular bacon into small cubes. Set bacon in a skillet and fry over medium heat until crispy.

Step 2:

Lift bacon out of skillet with a slotted spoon and set on plate. Add 2 Tbsp. olive oil to the bacon fat in the skillet. Add the onions, turn heat to medium-low and cook until quite tender, about 10 minutes. Mix cooked bacon and 2 Tbsp. balsamic vinegar into the onions.

Step 3:

Remove onions from heat and serve warm or at room temperature on or with such things as burgers, hot dogs and sausages.
