How to Make Cauliflower Rice

Use this technique to turn cauliflower into grain-like pieces that resemble rice when cooked.

Step 1

Remove leaves and core from a large cauliflower. Separate into large florets. In a food processor, pulse cauliflower in 2 or 3 batches until it’s finely chopped and resembles rice.

Step 2

Heat 2 Tbsp. olive or vegetable oil in a large skillet set over medium heat. Add the cauliflower rice, 2 Tbsp. water and salt to taste. Cover and cook, stirring occasionally, until the cauliflower is just tender, about 3 to 5 minutes. Fluff cauliflower rice with a fork and serve as a side dish, like you would regular, plain rice.

Step 3

To make cauliflower rice flavoured Mexican-style, cook as previously noted, and add chopped garlic, cumin and chili powder, to taste. When cooked, mix in such things as diced and sautéed onion, red bell pepper and jalapeño peppers, lime juice and chopped cilantro, again adding them to taste. Serve alongside Mexican-style entrees, grilled or baked chicken, pork chops and ribs, and fish dishes.
