How to Make Herb-Infused Simple Syrup

Use herb syrups in drinks, such as mint syrup in a mojito, or adding basil syrup to San Pellegrino. Flavour gin and tonics with thyme syrup. Use rosemary syrup to flavour orange juice and Perrier.

Step 1:

Bring 1 cup of water and 1 cup of sugar to a simmer and whisk just until sugar is dissolved.

Step 2:

Use herb Separate 28g packet of herbs into small sprigs and add to the pot. Once submerged in syrup, remove pot from the heat, cover and steep 20 minutes.

Step 3:

Set a cheesecloth-lined strainer over a two-cup glass measuring cup or other spouted vessel. Strain syrup into the cup; you should have about 1½ cups.
