How to Make Kale Pesto

Make your own fresh pesto with nutrient rich kale.

Step 1:

Gather the following ingredients: 3 cups torn and packed kale leaves, stems removed; 1/2 cup packed fresh basil leaves; 1/3 cup walnut pieces; 3 large garlic cloves, chopped; 1/2 cup freshly grated Parmesan cheese; 1/2 cup olive oil; and salt and pepper, to taste.

Step 2:

Place ingredients in a food processor and pulse until well-combined which should produce about 1 cup of pesto.

Step 3:

Store pesto in a tightly sealed jar with a skim of olive oil on top. It will keep about 10 days in the fridge. Pesto could also be frozen in an ice cube tray. When frozen, unmould and store in a freezer bag for up to two months.
