How to Make Mandarin Olives

Infuse olives with citrus-flavoured vodka for a cocktail-inspired bar treat. Tasting almost like dirty vodka martinis, these boozy bites are adult party-time snacking.

Step 1:

Pour 1 cup (250 mL) mandarin- or orange-flavoured vodka into a small saucepan. Add a sprig of fresh rosemary. Set over medium-low heat until lightly steaming, 3 to 5 min.

Step 2:

Add about 1 1/2 cups (375 mL) olives to saucepan; gently stir. Use any type of green or black olives – pitted or not – that you prefer. Let stand 1 hr.

Step 3:

Transfer olives, rosemary and about half the vodka into a serving dish; drizzle with olive oil and sprinkle with a little orange zest to serve. Use the leftover steeping vodka in cocktails.
