How to Make Nut Butter Buddies

No cooking required to whip up these wholesome snacks. Set aside an hour for chilling and enjoy!

Step 1:

Line a baking sheet with parchment paper. Pour 1 cup shredded unsweetened coconut into a dish; set aside. In large bowl, mix together 1 cup finely chopped hazelnuts (also called filberts), ½ cup sunflower seeds and 1/3 cup each flax seeds, hemp seeds and sesame seeds. To hazelnut mixture, add ½ cup peanut butter (or other nut butter), ¼ cup maple syrup, ½ tsp. vanilla extract and a pinch of salt. Mix well.

Step 2:

Wet your hands and roll hazelnut mixture into 1-inch balls. Roll each in the shredded coconut to coat. Place balls on lined baking sheet.

Step 3:

Chill 1 hour, or until firm. Store Nut Butter Buddies refrigerated in airtight container up to 3 days or freeze for up to 1 month.
