Pineapple Colada

Remove top from a fresh pineapple, and then cut in half widthwise. Create 2 cups by cutting and scooping the flesh out from each half pineapple. Place 1 cup of that flesh, chopped, 3 oz. rum, 1/3 cup coconut milk and 1 1/4 cups pineapple juice in a blender and puree. Pour mixture into your cups, add some ice cubes, and serve.

Hawaiian Sunset

Combine 2/3 cup pineapple juice, 1/3 cup each of grapefruit and orange juice, 3 oz. rum and a splash of soda water in a mixing glass. Divide mixture between two ice-filled glasses. Add a spoon of maraschino cherry juice to each drink. Garnish each drink with 2 maraschino cherries, orange slice and a mint sprig.

Lime and Coconut

Dip rims of 2 highball glasses in coconut water. Now dip and coat the rim of each glass with shredded coconut. Fill each glass with ice cubes. Combine 1 cup coconut water, 1/4 cup fresh lime juice, 3 oz. rum and 2 Tbsp. honey in a mixing glass. Divide and pour drink into your glasses. Top up each drink with a little more coconut water, if needed. Garnish each drink with a lime slice, mint sprig and sprinkle of shredded coconut.
