How to slow-grill brisket on the BBQ

Make your very own mouth-watering brisket at home with these tips to create a slow-smoked, tender and packed full of flavour BBQ meal that will always be memorable.

  1. Rub brisket generously with your favourite spice rub (make sure it doesn’t contain sugar).
  2. Lightly char all sides on BBQ. Then wrap in foil.
  3. Smoke on indirect or low heat (about 110°C/225°F) with the lid closed for 3-4 hours.
  4. Check for tenderness. Continue cooking, if required, until fully tender and internal temperature reaches 90°C/195°F.
  5. Unwrap and place directly on a hot grill to crisp edges.
  6. Brush with BBQ sauce, if desired to finish.
  7. Let the brisket rest for 10 minutes before slicing and serving.
