Ponzu Sauce

Use this citrus–flavoured, soy mixture as a dip for dumplings, tempura or seafood, and in stir-fries, marinades and dressings. To make, combine 1/2 cup soy sauce, 1/4 cup orange juice, 2 Tbsp. lemon juice, 1 Tbsp each of water, rice vinegar and icing sugar.

Wasabi Teriyaki Mayo

Use this spicy mixture as dip, sauce or spread. To make, combine 3/4 cup mayonnaise, 2 Tbsp. teriyaki sauce, 1 tsp. grated fresh ginger and 2 to 3 tsp. wasabi paste.

Japanese-style Steak Sauce

Serve this addictive sauce with seared steak, use as a dip, or spoon on rice. To make, in a blender, place 1 cup mayonnaise, 1/4 cup roasted sesame seeds, 2 Tbsp. soy sauce, 1 Tbsp. each water, vegetable oil and rice vinegar, 2 tsp. sesame oil, 1/2 tsp. dry mustard, and 1/4 tsp. each ground ginger, onion powder and garlic powder. Blend until smooth.
