Soy Beverage Chai Tea

This dairy-free, heavenly-spiced chai can be enjoyed piping hot or icy cold.

Step 1

Bring 2 cups soy beverage, 1 cinnamon stick, broken into 3 pieces, 1/2 tsp. whole black peppercorns, 6 whole cloves, 3 thin slices fresh ginger, 2 Tbsp. honey (or to taste), pinch of ground cardamom, and 1 tsp. loose black tea to a boil. Reduce to a gentle simmer. Simmer chai 10 minutes.

Step 2

Strain through a fine sieve into another pot. Return to heat and bring to just below a simmer. Remove pot from heat and if serving hot, whip until foamy on top using an immersion (hand) blender or whisk.

Step 3

Divide chai between two cups and garnish each drink with a cinnamon stick, if desired. Chai could also be cooled to room temperature, refrigerated and served cold, over ice. If served cold, don’t whip until frothy.
