For each meal, arrange 11/2 cups or so of warmed
Apple, Carrot, Brussels Sprouts and Bacon on
one side of a plate. Set 2 boneless pork loin
chops, grilled or seared and seasoned with salt
and pepper and desired spices, on the other side.
Top the pork with a few toasted walnuts and, if
desired, nuggets of blue cheese. Also serve with a
dollop of Dijon mustard and a few cooked beets.
