How to Cook Scallops

Here’s a simple, but splendid way to cook and deliciously flavour large East Coast scallops.

Step 1

Pat 10 to 12 large East Coast scallops dry with paper towel, season with salt and white pepper. Heat 1 Tbsp. olive oil in non-stick or stainless steel skillet set over medium-high. When oil is hot, sear scallops one to two minutes on each side, or until just barely cooked through. Set scallops on a heated serving plate.

Step 2

Lower the heat to medium-low. Add one minced garlic clove and cook 30 seconds. Add 2 to 3 Tbsp. of butter to the skillet and melt and cook until light brown in colour. Mix 1 Tbsp. lemon juice into the butter.

Step 3

Spoon the butter mixture over the scallops and serve. Make two servings. Serve the scallops with rice and steamed asparagus or green beans.
