How to Make Cauliflower Steak
Sneak in your veggies with a slab of cauliflower seared and then roasted until tender, similar to a steak.
Step 1

Step 1:

Select a large cauliflower with tightly packed florets. Pull and cut off leaves, and then trim off some of the stem, leaving core intact.
Step 2

Step 2:

Set cauliflower, core-side-down. Cut 1” off two of sides of it, creating a rectangular shape. (Reserve trimmings for another use.) Cut cauliflower in half through the core. Now cut each half into two equal steaks, making sure each one has some core on it so it holds together.
Step 3

Step 3:

Preheat oven to 400°F. Pour 2 Tbsp. olive oil into a large skillet set over medium-high heat. Sear steaks, in batches, 2 minutes per side, until golden brown, and then set on a baking sheet. Season steaks with your favourite herb/spice blend. Roast until tender, about 15 minutes. If desired, serve cauliflower with a sauce, such as marinara, curry or harissa.
