How to Make Falafel

Making falafel is simple and only uses a few ingredients that you probably already have in your pantry!

Step 1

Soak 1 cup dried chickpeas covered with 4 cups cold water for 8 hours or overnight. Drain well and add to a food processor with 1/2 cup chopped onion, 2 Tbsp. each chopped cilantro and parsley, 1 tsp. each salt, ground cumin and baking powder, 3 Tbsp. flour, 1/8 tsp. cayenne pepper and 2 sliced garlic cloves. Pulse until well blended. Transfer to a clean bowl, cover and refrigerate 1 hour.

Step 2

Form the chickpea mixture into oblong balls, each about 1” tall, and 1 1/2” inches long. Set falafel, not touching, on a parchment paper-lined plate as you go along. You should get about 20 falafel.

Step 3

Preheat oven to 200˚F. In a deep skillet set over medium-high, heat 2” of vegetable oil to 375ºF. Adjust heat to maintain temperature. Fry falafel in batches of 5 or 6 for 1 to 2 minutes per side, until golden and cooked. Drain on paper towel and keep warm in oven until all are fried. Serve on warm pita, with tahini or hummus, tzatziki, chopped tomatoes, onion and green bell pepper, and shredded lettuce.
